Today’s recipe is a very simple appetiser idea: Bell Pepper Involtini. I like to serve these involtini as part of a buffet or a barbecue and they are always a hit. They are very easy to make and I love how colourful they look. Besides, they should be served at room temperature, so you don’t even need to warm them up! The flavours are all Sicilian: tuna, capers and anchovies… they do remind me of my summer holidays at the seaside. Try them and let me know what you think!
- 1 red bell pepper, roasted and cut lengthwise
- 2 tbsp cream cheese
- 40 gms – 3 tbsp tuna, canned
- 1 tsp capers, rinsed
- 1 anchovy
