It’s cake time! I made this Cherry Frangipane Cake in December (I know, I know… a LONG time ago!) for my mother’s birthday. It was amazing! My mother had brought me the recipe as a cut-out from an Italian magazine and it looked too good not to give it a go. It’s actually quite easy to make and it looks spectacular. It tastes really good too: I love the combination of cherries and almonds, it’s a classic that never fails! In this particular case, the cherry syrup is aromatized with ginger and mint and this gives the all cake a refreshing twist. I can’t wait for cherries to be back in season down-under so I can make it again! Enjoy!
