Ham and Cheese Frittata Roll

Ham and Cheese Frittata Roll - a delicious meal that is very quick to prepare!

Ingredients

  • 6 eggs
  • 3 tbsp Parmigiano Reggiano finely grated
  • 1 tsp parsley chopped
  • 2 tbsp milk
  • Salt and pepper to taste
  • 150 gms – 5 oz. ham slices
  • 200 gms – 7 oz. cheese slices Provola, Scamorza, Gouda, or Swiss

Instructions

  1. In a bowl, whisk together the eggs, grated Parmigiano Reggiano, parsley, milk, salt, and pepper.
  2. Line a 20x30cm (8”x12”) cookie sheet with baking paper and pour the egg mixture into it.
  3. Bake in a pre-heated oven at 180°C – 355°F for 10-15 minutes or until golden.

  4. When cooked, cover the frittata with cling wrap and let it rest for 10 minutes or until cool.
  5. Turn the frittata around and remove the baking paper.
  6. Cover the surface with the slices of ham and cheese, then roll the frittata like a Swiss roll.
  7. Wrap it in cling wrap and let it rest for 10 minutes so it retains its shape.
  8. Then remove the cling wrap and put the roll back in the pre-heated oven. Bake it again at 180°C – 355°F for 5 minutes or until the cheese melts.
  9. Slice it and serve warm.
