Ingredients

  • 500 gms – 1.1 lbs. pork mince
  • 2 rindless bacon rashers finely chopped
  • 1 small onion grated
  • 1 garlic clove finely chopped
  • 1 cup breadcrumbs
  • 1 egg lightly beaten
  • 1 tbsp Worcestershire Sauce
  • 2 tbsp sage leaves chopped
  • 50 gms – 3 tbsp butter
  • 1 tbsp extra virgin olive oil
  • 3 small green apples peeled and sliced
  • 1 ½ tbsp maple syrup
  • 12 sage leaves extra
  • Salt to taste

Instructions

  1. Cook the bacon, onion and garlic in a non-stick frying pan over medium heat for 10 minutes, stirring occasionally until the bacon is browned and the onion is soft. Let it cool down.
  2. Combine the mince, breadcrumbs, egg, Worcestershire Sauce, and chopped sage. Add the bacon mixture and season with salt. Using your hands, mix till well combined.
  3. Shape it into 8 patties and set aside.
  4. Heat the oil in a non-stick frying pan over medium heat. Cook the patties, in batches, for 4-5 minutes on each side, or until cooked through. Transfer to a warm plate and cover with foil to keep them warm.
  5. Heat the butter in a non-stick frying pan over medium heat. Add the sliced apples, drizzle with maple syrup and cook for 5-6 minutes, turning halfway through the cooking time. Scatter with the extra sage leaves and cook for another minute.
  6. Serve the pork patties with sweet potato mash and top with the pan-fried apples.
