Lemon Chicken Wrap with Aioli - the recipe for a delicious sandwich which is an ode to the Mediterranean region.

Ingredients
Marinade
500gms– 1 lb. chicken tenderscubed
2tbspextra virgin olive oil
2garlic clovessmashed
Zest of 1 lemongrated
1tbsplemon juice
1tspsalt
½tsporegano
½tspcumin powder
¼tspcoriander powder

Instructions
Mix all the ingredients of the marinade together.
Add the chicken, mix well and marinate for 30 minutes.
When ready to grill, skewer the chicken and grill it for about 6-8 minutes, turning occasionally so that the chicken gets a bit charred on all sides, or until cooked through.
Allow the chicken to rest, lightly covered with foil, for about 5-10 minutes, then remove the chicken cubes from the skewers and set aside.
To assemble, add a little drizzle of Aioli onto the wraps, followed by the greens, the tomato slices, and about one skewer-worth of the lemon chicken. Drizzle over a generous amount of Aioli and fold the sides towards the middle to form a “wrap”.
