Ingredients

Marinade

  • 500 gms – 1 lb. chicken tenders cubed
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves smashed
  • Zest of 1 lemon grated
  • 1 tbsp lemon juice
  • 1 tsp salt
  • ½ tsp oregano
  • ½ tsp cumin powder
  • ¼ tsp coriander powder

Wraps

  • 4 wraps
  • Arugula/Rocket
  • Tomatoes sliced
  • Aioli better if home-made – click here for the recipe

Instructions

  1. Mix all the ingredients of the marinade together.
  2. Add the chicken, mix well and marinate for 30 minutes.
  3. When ready to grill, skewer the chicken and grill it for about 6-8 minutes, turning occasionally so that the chicken gets a bit charred on all sides, or until cooked through.
  4. Allow the chicken to rest, lightly covered with foil, for about 5-10 minutes, then remove the chicken cubes from the skewers and set aside.
  5. To assemble, add a little drizzle of Aioli onto the wraps, followed by the greens, the tomato slices, and about one skewer-worth of the lemon chicken. Drizzle over a generous amount of Aioli and fold the sides towards the middle to form a “wrap”.
  6. Serve immediately.
