Italian Sausages in Tomato Sauce

Italian Sausages in Tomato Sauce, aka Salsiccia al Sugo - great on its own and even better if served on polenta or mash potato or if used as pasta sauce.

Ingredients

  • 500 gms – 1 lb. Italian sausages click here for the recipe
  • 2 tbsp extra virgin olive oil
  • 2 tbsp onion chopped
  • 140 gms – 5 oz. tomato concentrate
  • 260 gms – 9 oz. tomato passata/puree
  • Salt to taste
  • Basil leaves

Instructions

  1. Quickly sauté the chopped onion in the extra virgin olive oil. Add the sausages and brown well on all sides.
  2. Add the tomato concentrate and tomato puree. Mix and add enough water to cover the sausages.
  3. Add the basil leaves and season with salt to taste.
  4. Cover and cook on a low fire for about 30 minutes or until the sausage is cooked through and the sauce has thickened.
  5. Serve hot with mash or polenta or use as pasta sauce.
