White Chocolate Hazelnut Cookies

White Chocolate Hazelnut Cookies - crunchy, buttery and delicious!

Ingredients

  • 220 gms – 1 ¾ cup all purpose flour
  • 100 gms – 7 tbsp butter
  • 100 gms – ½ cup sugar
  • 1 tsp baking powder
  • 1 egg
  • ½ tsp vanilla extract
  • White chocolate melts
  • Hazelnut crushed

Instructions

  1. Put the cold butter and sugar in a mixer and blend for a few seconds until you get coarse crumbs.
  2. Add the egg and blend for a few seconds.
  3. Add the flour, baking powder and lemon zest and blend until incorporated.
  4. Knead into a ball, flatten it, wrap it in cling wrap and refrigerate for 1 hour.
  5. Roll the dough into a 3 mm - 1/8 ″ thick sheet.
  6. Cut out 40 discs. Put some white chocolate on half of the discs and cover them with the remaining discs. Top with the crushed hazelnuts.
  7. Bake in a pre-heated oven at 180°C – 355°F for 20 minutes or until golden.
  8. Let them cool down on a wire rack and enjoy.
