Pinzimonio - the Italian way of eating raw vegetables by dipping them into a vinaigrette

Ingredients

Vegetables

  • Carrot sticks
  • Celery sticks
  • Fennel slices
  • Cherry tomatoes

Pinzimonio Vinaigrette

  • 6 tbsp extra virgin olive oil
  • 6 tbsp red wine vinegar
  • Salt to taste

Instructions

  1. Make the pinzimonio vinaigrette by mixing the extra virgin olive oil, red wine vinegar and salt in a bowl.
  2. Serve as a dip for the vegetables.

Recipe Notes

You can use your favourite vegetables: cucumber, radishes, radicchio, bell peppers… they all work very well too.
