Cherry Financiers

Cherry Financiers - small, light and moist French cakes made with almond flour and beurre noisette.

Ingredients

  • 200 gms – 1 ½ cups icing sugar
  • 100 gms – ½ cup butter
  • 6 egg whites
  • 75 gms – ½ cup almond meal
  • 75 gms – ½ cup flour
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 500 gms – 1.1 lbs. cherries pitted and chopped
  • Almond slivers

Instructions

  1. Put the butter in a saucepan and melt it until brown and fragrant. Don’t burn it though or it will turn bitter!
  2. Remove the saucepan from the fire and put it in cold water to cool it down fast.
  3. In a bowl, sift together the flour, almond meal, baking powder and icing sugar. Mix well.
  4. Slowly add the egg whites and stir well.
  5. Add the melted butter and vanilla extract and mix well.
  6. Add the cherries and mix to incorporate.
  7. Cover the bowl with cling wrap and refrigerate it for at least 6 hours.
  8. Divide the batter into the financiers molds (fill them up to 3/4).
  9. Bake in a pre-heated oven at 200°C – 390°F for 10 to 15 minutes. When ready, let them cool down, then unmould them and transfer to a wire rack to cool down completely.
  10. Decorate with almond slivers and serve.
