Ingredients

  • 200 gms – 7 oz. plain cookies like Digestive or Scotch Fingers
  • 70 gms – 1/3 cup toasted hazelnuts halved
  • 70 gms cocoa – 2/3 cup powder
  • 130 gms –  1 ¼ sticks butter
  • 100 gms – ½ cup granulated sugar
  • 70 gms –  2 ½ oz. dark chocolate roughly chopped
  • 1 tbsp rum or milk
  • 1 tbsp milk
  • Icing sugar

Instructions

  1. Coarsely crush the cookies and keep them aside.
  2. Put the butter and dark chocolate in a pot and heat on medium. Stir until completely dissolved and smooth.
  3. In a bowl, mix together the crushed cookies, halved toasted hazelnuts, cocoa powder and granulated sugar.
  4. Add the melted chocolate and butter mixture, the rum and milk and mix well with a wooden spoon.
  5. Transfer the mixture onto some baking paper and shape it into a salami.
  6. Roll it tight in aluminium foil and place it in the fridge to harden for at least 3 hours (better if overnight).
  7. When hard, roll it in icing sugar, slice it and serve it!

Recipe Notes

You can use some kitchen string to tie it up like a real salami if you like.
