Ingredients
Lemongrass and Ginger Simple Syrup
1 ½tbspsugar
1 ½tbspwater
½tspfresh gingergrated
2 ½cm– 1 inch lemongrassbruised
1tsplime juice
Mojito
10cm– 4 inch lemongrassbruised
½limecut in wedges
5mint leavesbetter if you find yerba buena or spearmint
3tbspLemongrass and Ginger Simple Syrup
45ml– 1 ½ oz. white rum
125ml– ½ cup soda water
1cupice cubes
Instructions
Lemongrass and Ginger Simple Syrup
Put all the ingredients in a small pot and put it on the fire. Mix to dissolve the sugar, then put the fire off and let it cool down completely. Filter and keep aside.
Mojito
Put the mint leaves and the lime wedges in a Mojito glass (or if your muddler does not fit the Mojito glass like mine, do this in a separate bowl). Crush the mint and lime together to release their juices.
Fill the glass (or transfer to a Mojito glass and then fill it) with the ice cubes.
Add the rum and fill the glass with the cold Lemongrass and Ginger Simple Syrup and soda water. Mix.
Decorate with the lemongrass stick. Serve immediately and enjoy!
