Ingredients

Salad

  • 6 or 7 cups mixed tomatoes halved
  • 250 gms – 9 oz. Halloumi cheese
  • Extra virgil olive oil for pan frying
  • Basil leaves

Vinaigrette

  • 3 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp oregano
  • 1 pinch salt

Instructions

Vinaigrette

  1. Mix all the ingredients together and keep aside.

Salad

  1. Cut the Halloumi cheese in 1 cm – ½ inch thick slices. Pan fry them for a couple of minutes in a pan with extra virgin olive oil. Keep them on a plate covered with kitchen paper to absorb the excess oil.
  2. Put the halved tomatoes, pan fried Halloumi and basil leaves in a bowl and toss them with the vinaigrette.
  3. Serve immediately.
