Lime and Coconut Madeleines

The recipe for soft and moist Lime and Coconut Madeleines, perfect as an afternoon tea snack or even for breakfast.

Ingredients

  • 80 gms – 2.8 oz. sugar
  • 90 gms – 3.2 oz. flour
  • 1 tsp baking powder
  • 2 eggs
  • 40 gms – 1.4 oz. shredded coconut
  • Zest of 1 lime
  • 1 tsp honey
  • 50 gms – 3.5 tbsp butter melted and cooled

Instructions

  1. In a bowl, mix the flour, baking powder and shredded coconut and keep aside.
  2. Whisk the eggs and sugar until the sugar has dissolved.
  3. Add the honey and lime zest and whisk to combine.
  4. Add the flour and coconut mixture and whisk to combine.
  5. Add the melted butter and mix well. Put the batter in the fridge while you prepare your moulds.
  6. Grease the moulds with melted butter and coat with a little flour. Put the pan in the freezer for 5 minutes so that the butter hardens again. This will help you to unmould your madeleines.
  7. Fill the moulds with the batter and put it in the fridge for 1 hour to rest.
  8. Bake in a preheated oven at 200°C – 390°F for 6 to 8 minutes.
  9. Dust with icing sugar, extra shredded coconut and lime zest just before serving.
