– 6.5 oz. flour
– 3.5 oz. Parmigiano Reggiano
– 2.8 oz. butter
softened and chopped
or tomato concentrate, enough to make a pliable dough

In a bowl, mix together the flour, grated Parmigiano Reggiano, oregano and salt.
Add the chopped butter and rub it in with your fingers.
Add enough ketchup as to obtain a pliable dough (similar to cookie dough in consistency). Knead well, make it into a ball and keep it in the fridge for 20 minutes.
Roll it into a 5 mm – 0.2 inch thick sheet and cut out the sticks.
Put them on a tray covered with baking paper and bake them in a pre-heated oven at 180°C – 355°F for 15 to 20 minutes or until golden brown.
Serve at room temperature.
