Ingredients

  • 4 slices of fresh tuna 2.5 cm – 1 inch thick
  • 2 tbsp vegetable oil
  • 3 onions thinly sliced
  • A little water
  • 5 tbsp oil
  • 80 ml – 5.5 tbsp red wine vinegar or white wine vinegar
  • 2 tsp sugar
  • 6 pepper corns
  • 1 bay leaf optional
  • Salt to taste

Instructions

  1. Season the tuna slices with salt and shallow fry them in a little vegetable oil on both sides until cooked through. Keep them aside.
  2. Put the sliced onions in a frying pan and cover them with water. Cook them on a medium flame until soft and the water has evaporated. Add the extra virgin olive oil and sauté them for a couple of minutes.
  3. Mix the sugar with the vinegar until dissolved and add this to the cooked onions. Put the fire on high and cook for a couple of minutes.
  4. Pour the sweet and sour onions on the tuna slices and refrigerate overnight.
  5. Serve the next day at room temperature.
