Bailey's Mousse

Celebrate Paddy's Day with a delicious Bailey's Mousse!

Ingredients

  • 170 gms – 6 oz. Greek yogurt
  • 170 gms – 6 oz. cream for whipping
  • 90 ml – 3 oz. Bailey’s Irish Cream
  • 45 gms – 1.5 oz. caster sugar
  • 8 mini meringues roughly crushed
  • 10 gms – ½ oz. cocoa powder

Instructions

  1. Whip the cream with 15 gms – 0.5 oz. of the caster sugar and keep it aside.
  2. Mix the yogurt with the remaining sugar and Bailey’s.
  3. Now gently fold the whipped cream in the yogurt and Bailey’s mix.
  4. Take 4 serving glasses and put some mousse at the bottom, top it with some crushed meringues, cover with some more mousse and so on. Finish with some crushed meringues and a dusting of cocoa powder.
  5. Refrigerate until you are ready to serve it.
