Ingredients

Chocolate Cupcakes

  • 100 gms – 3.5 oz. dark chocolate
  • 250 ml – 1 cup water
  • 125 gms – ½ cup butter softened
  • 255 gms – 1 ¼ cups brown sugar
  • 3 eggs
  • 225 gms – 1 ½ cups self-raising flour
  • 75 gms – ½ cup plain flour
  • 30 gms – ¼ cup cocoa powder

“Sky/Pond” and “Grass” Vanilla Icing:

  • 125 gms butter
  • 225 gms icing sugar
  • 1/2 tsp vanilla extract
  • Blue food coloring
  • Green food coloring
  • Fondant decorations

Instructions

Chocolate Cupcakes

  1. Put the water and chocolate in a small pot and heat it on low heat. Cook, stirring, for 5 minutes or until the chocolate melts. Keep aside to cool down.
  2. Beat the butter and sugar with an electric mixer until pale. Add the eggs, one at a time and keep beating. Add the flours and cocoa powder and stir until just combined. Now add the melted chocolate and stir well.
  3. Spoon among the lined muffin pans.
  4. Bake in a preheated oven at 160°C for 25 to 30 minutes or until a skewer inserted in the centre comes out clean. Remove from the oven and transfer to a wire rack to cool down.

“Sky/Pond” and “Grass” Vanilla Icing:

  1. Beat the softened butter for a few minutes and then incorporate the icing sugar, vanilla extract and the blue food colour. Mix well. Do the same for the green icing.
  2. Pipe the icing on the cupcakes and decorate them with the fondant decorations (I usually make these with my own stencils the day before and I let them dry before using them on the cupcakes).
