Frozen Piña Colada
Frozen Piña Colada – a tropical delight and a great way to toast to the new year.

– 3 oz. rum
scoops coconut ice cream
– ½ cup pineapple juice
– 1 cup frozen pineapple chunks
Maraschino cherries or regular cherries
In a blender, combine the coconut ice cream, rum, pineapple juice, frozen pineapple chunks, and simple syrup. Blend until smooth.
Pour into serving glasses. Garnish with maraschino cherry and pineapple wedge.
To make a non-alcoholic version, substitute the rum with the same amount of coconut water.
