Ingredients

  • 140 gms – 5 oz. tuna in olive oil drained
  • 2 tbsp mayo low fodmap
  • 2 tsp Dijon mustard
  • ¼ cup cucumber diced (optional)
  • 1 tbsp green onion green part only
  • 2 tbsp Kalamata olives sliced
  • 4 slices bread low fodmap
  • Tomato slices
  • Lettuce

Instructions

  1. In a bowl, mix together the tuna, cucumber, green onion, and olives.
  2. Mix together the mayo and Dijon mustard and add to the tuna salad. Mix well.
  3. Spread the tuna salad on the bread. Top with slices of tomato and lettuce and make the sandwich.
