Ingredients

  • 400 gms – 14 oz. fresh pineapple cubed
  • 2 tbsp coconut oil
  • 1 tbsp brown sugar
  • 2 tsp vanilla extract
  • 10 mint leaves
  • Coconut yogurt or your favourite yogurt or vanilla ice cream to serve

Instructions

  1. Melt the brown sugar with the coconut oil over medium heat.
  2. Add the cubed pineapple and cook for about 5 to 7 minutes, or until soft and caramelised.
  3. Add the vanilla extract, mix and remove from the fire.
  4. Let it cool for a couple of minutes, then add the mint leaves.
  5. Serve warm with coconut yogurt (or your favourite yogurt) or vanilla ice cream.
