Ingredients
Pork Meatballs
500gms– 1 lb. pork mince
4tbspcoriander leaves chopped
2tbsplemongrass chopped
2tbspbrown sugar
½tbspgarlic infused olive oil
1tspsalt
Satay Sauce
2tbsppeanut butter
2tbspsoy sauce or tamari
2tbspmaple syrup
½tsprice vinegar
1tspginger grated
¼tspsesame oil
½cupwater

Satay Sauce
1tbspvegetable oil
120gms– 1 cup carrotssliced
200gms– 7 oz. red bell peppersliced
Salt to taste
2tbspcoriander leaveschopped
Instructions
Pork Meatballs
Using your hands, mix together all the ingredients in a big bowl.
Using a ½ tablespoon, divide the mince. Then wet both hands with some water or oil spray and shape into about 12 meatballs.
Spray them with some oil and bake in a preheated oven at 180°C – 355°F for 15 minutes, or until cooked through. Keep aside.
Low Fodmap Satay Sauce
Put all the ingredients in a saucepan and bring to a boil.
Simmer for a couple of minutes.
Stir Fry
In a pan, heat up the vegetable oil. When hot, stir fry the carrots and bell pepper. Season with salt to taste.
Add the meatballs and the satay sauce. Add a little water and cook for 2 to 3 minutes.
Add the chopped coriander and mix.
Serve with steamed rice.
Recipe Notes
If you are not on the Low Fodmap diet, you don’t need to be so careful about weighing the vegetables you use, so don’t stress about it.
Use gluten-free soy sauce for a gluten-free dish.
You can also use ground chicken instead of pork if you prefer.
If you cannot find lemongrass, substitute it with 1 tablespoon of grated ginger.
