Ingredients

  • 400 gms – 3 1/5 cups 14 oz. all-purpose flour
  • 1 egg
  • 100 gms – ½ cup granulated sugar
  • 50 gms – ¼ cup butter
  • 7 gms – 2 tsp active dry yeast
  • 250 ml – 1 cup milk lukewarm
  • 1 tsp granulated sugar
  • ¾ cup chocolate chips dark or milk
  • Honey for brushing

Instructions

  1. Mix the yeast with the 1 teaspoon of sugar and lukewarm milk and set aside to activate.
  2. When frothy, put it in the bowl of a stand mixer fitted with a hook attachment together with the flour, egg, butter and the remaining sugar.
  3. Knead for about 15 minutes, until the dough is smooth and very elastic.
  4. When ready, let the dough cool down for 5 minutes, then add the chocolate chips and knead by hand.
  5. Make it into a ball and let it rise for 1 hour or until it doubles in size.
  6. Make 15 buns of about 40-50 grams (1 ½ oz.) each and put them on an oven tray lined with baking paper. Let them rise for another hour.
  7. Brush with some warm honey and bake in a pre-heated oven at 180°C – 350°F for 20 minutes or until golden brown.
