Ham and Cheese Skillet Focaccia

Ingredients

  • 300 gms – 1 ½ cups durum wheat flour
  • 200 ml – ¾ cup + 1 tbsp water
  • 30 ml – 2 tbsp extra virgin olive oil
  • 5 gms – 1 tsp salt
  • 200 gms – 7 oz. stracchino cheese chopped
  • 100 gms – 3.5 oz. ham sliced
  • 150 gms – 5 oz. mozzarella sliced
  • Extra virgin olive oil spray

Instructions

  1. Put the durum wheat flour, water, extra virgin olive oil and salt in the bowl of an electric mixer fitted with the hook attachment and knead well. Make into a ball and divide the dough in half.
  2. Grease the skillet and keep it aside.
  3. Roll half of the dough into a 20 cm – 8 inch circle and put it in the skillet. Top with the chopped cheese and sliced ham.
  4. Roll the other half of the dough into a 20 cm – 8 inch circle and use it to cover the focaccia. Pinch the sides closed with your fingers.
  5. Cook on a medium flame for 15 minutes, then flip and cook for another 7 minutes, or until cooked through.
  6. Serve immediately.
