Pineapple Mojito - a refreshing tropical drink, perfect for any occasion!
– 1 ¼ oz. oz. Malibu
– 1/3 oz. Grand Marnier
cut in wedges
– ¾ oz. simple syrup
equal parts of sugar and cold water dissolved together
plus more for garnish
– ½ cup soda water
or to fill the glass
Put the mint leaves, pineapple chunks and the lime wedges in a Mojito glass. Crush them together with a muddle to release their juices. Do not strain the mix.
Mix the pineapple juice, Malibu, Grand Marnier and simple syrup in a separate glass.
Fill the Mojito glass with the ice cubes.
Add the Malibu and Grand Marnier mixture.
Fill the remainder of the glass with soda water.
Decorate with more mint leaves. Serve immediately.
