Saffron Gnocchi with Ham and Peas

Saffron Gnocchi with Ham and Peas - a classic Italian dish with a twist!

  • 1 batch Saffron Potato Gnocchi
  • 2 tbsp onion chopped
  • 2 tbsp extra virgin olive oil
  • 4 tbsp ham chopped
  • 2 cups peas fresh or frozen
  • 200 ml – ¾ cup cream
  • Salt to taste
  • Parmigiano Reggiano finely grated – to serve


  1. Make the Saffron Potato Gnocchi as per my tutorial.
  2. Put the chopped onion and extra virgin olive oil in a big pan and sauté it for a minute.
  3. Add the ham and peas (if you are using frozen peas, there is no need to defrost them – if you are using fresh peas you will need to add a couple of tablespoons of water for them to cook).  Stir and cook for 5 minutes or until the peas are soft.
  4. Add the cream and salt to taste and cook for a minute, then put the fire off.
  5. Cook the gnocchi as per the instructions that you find here.
  6. When cooked, add the gnocchi to the pan with the ham and pea sauce.  Put the fire on and mix well for about 1 minute.
  7. Serve immediately with some grated Parmigiano Reggiano on the top.
