Ingredients

– 2 cups shredded chicken
I used leftovers from my Roast Brined Chicken, but rotisserie chicken would work just as well

avocado
chopped

cherry tomatoes
halved

cos lettuce
¼
red onion
sliced

corn
1
red chilly
sliced
Cilantro
Crushed or home-made taco shells
Ranch dressing
Lime wedges
to serve
Instructions
In a bowl, mix together the shredded chicken, avocado, tomatoes, cos lettuce, red onion, corn, red chilly, cilantro and crushed taco shells.
Drizzle with the ranch dressing.
Serve immediately with lime wedges.
