Ingredients

Grilled Chicken

  • 180 gms – 6 oz. chicken tenders or breast
  • 1 tbsp lemon juice
  • ½ tbsp extra virgin olive oil
  • 1 tbsp rosemary
  • 2 sprigs thyme
  • 4 sage leaves
  • 1 bay leaf
  • 1 garlic clove
  • Salt to taste
  • 1 tbsp lemon juice
  • ½ tbsp extra virgin olive oil

Vinaigrette

  • 3 tbsp lemon juice
  • 1 tbsp honey
  • 3 tbsp extra virgin olive oil
  • Salt to taste

Salad

  • 3 cups baby cos lettuce
  • 8 cherry tomatoes halved
  • 190 gms – 7 oz. corn
  • Basil leaves

Instructions

Grilled Chicken

  1. Marinate the chicken tenders with the herbs, lemon juice, extra virgin olive oil and salt for 1 hour.
  2. Grill the chicken until cooked through. Put it in a bowl with 1 tablespoon of lemon juice and ½ tablespoon of extra virgin olive oil and let it cool down completely. You can also do this the day before and refrigerate the cooked chicken.

Vinaigrette

  1. Put the honey, extra virgin olive oil, lemon juice and salt in a small mason jar. Close the mason jar tightly with the lid and shake until well combined. Keep aside.

Salad

  1. Roughly shred the baby cos lettuce and mix it with the halved cherry tomatoes, basil and corn.
  2. Slice the grilled chicken and toss it with the salad.
  3. Dress with the vinaigrette and serve immediately.
