Pasta with Fried Zucchini

Pasta with Fried Zucchini - a quick, easy and affordable dinner idea, ready in 20 minutes!

  • 4 medium zucchini sliced
  • 2/3 cup extra virgin olive oil
  • Salt to taste
  • 350 gms – 13 oz. long pasta Linguine or Spaghetti
  • Parmigiano Reggiano finely grated, to serve


  1. Slice the zucchini and season with salt.
  2. Put the extra virgin olive oil in a frying pan and heat it on medium heat. Fry the sliced zucchini in batches and put them on a plate when they are golden brown on both sides.
  3. Make sure not to burn the oil. Reserve the oil in the frying pan.
  4. Cook the pasta following the steps on How to cook pasta “al dente” in the Techniques page of this site.
  5. Put the drained pasta in the frying pan where you fried the zucchini and mix it with the oil. Add the zucchini and mix well.
  6. Serve immediately with a generous amount of finely grated Parmigiano Reggiano on the top.
