Snapper all’Acqua Pazza

  • 2 medium sized snappers 900 gms – 2 lbs., cleaned and scaled
  • 4 garlic cloves sliced
  • 300 gms – 10 oz. cherry tomatoes quartered
  • 2 tbsp extra virgin olive oil
  • 1 tbsp parsley chopped
  • Salt and pepper to taste
  • 1/3 cup water
  • 1/3 cup white wine


  1. Put the fish in a baking dish and season it with salt and pepper.
  2. Drizzle the extra virgin olive oil on the top.
  3. Add the sliced garlic, quartered cherry tomatoes, chopped parsley, water and white wine.
  4. Bake in a pre-heated oven at 220°C – 430°F for 20 to 25 minutes, or until cooked through.
  5. Clean and serve hot with the sauce on the top.

Recipe Notes

You can also use the sauce for spaghetti.
