180gms– 1 ½ stick of buttersoftened
60gms– ½ cup icing sugarsifted
60gms– ½ cup custard powder
180gms– 1 ½ cup all-purpose flour
1tspbaking powder
Passion fruit Buttercream
100gms– 7 tbsp buttersoftened
120gms– 1 cup icing sugarsifted
5tbsppassion fruit pulp
Icing sugar for dustingoptional
Instructions
Put the softened butter in the bowl of an electric mixer fitted with the paddle attachment and beat it for 2 minutes. Add the custard powder and keep beating.
Sift in the flour and baking powder and keep beating.
Add the sugar and beat well.
Roll this mixture into 12 balls of approximately 40 grams - 1 1/2 oz. each and press them down with a fork.
Bake them in a pre-heated oven at 180°C – 355°F for 16-18 minutes, then let them cool down on the tray for 5 minutes before transferring them onto a rack to cool down completely.
To make the buttercream, beat the softened butter with an electric mixer fitted with a paddle attachment for a few minutes and then incorporate the icing sugar and passion fruit pulp. Mix well.
Pipe the passion fruit buttercream on half of the cookies and put the remaining cookies on the top, like a sandwich and serve.
