Pomegranate Mojito

A refreshing drink, perfect for any occasion: Pomegranate Mojito!

  • 30 ml – 1 oz. Pomegranate juice
  • 45 ml – 1.5 oz. Rum
  • ½ lime cut in wedges
  • 20 ml – ¾ oz. simple syrup equal parts of sugar and cold water dissolved together
  • 10 mint leaves plus more for garnish
  • 125 ml – ½ cup soda water or to fill the glass
  • 1 cup ice
  • Lime slice for garnish


  1. Put the mint leaves and the lime wedges in a Mojito glass.  Crush the mint and lime together to release their juices.  Do not strain the mix.
  2. Mix the pomegranate juice, rum and simple syrup in a separate glass.
  3. Fill the Mojito glass with the ice cubes.
  4. Add the pomegranate and rum mixture.
  5. Fill the remainder of the glass with soda water.
  6. Decorate with a slice of lime and more mint leaves.  Serve immediately.
