Ingredients

  • 125 gms – 1 cup flour
  • 90 gms – 1 cup unsweetened shredded coconut
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 125 gms – ½ cup butter softened
  • 125 gms – ½ cup sugar
  • 1 large egg

Instructions

  1. Mix the flour, coconut, baking powder and salt in a medium bowl.
  2. Using an electric mixer, beat the butter and sugar until creamy.
  3. Add the egg, beating until just blended.
  4. Add the dry ingredients and mix until combined.
  5. Form heaped teaspoons of dough into balls and place them about 5 cm – 2 inches apart on a baking tray lined with baking paper.
  6. Bake the cookies in a pre-heated oven at 205°C – 400°F for about 10-15 minutes, or until the cookies are golden brown but still very soft (they will firm up on cooling).
  7. Leave the cookies to cool on the tray for 15 minutes and then transfer them to a wire rack to cool completely.

Recipe Notes

If you are baking them in batches, keep the uncooked cookies in the fridge so they firm up and won’t go completely flat in the oven.

Once the cookies have cooled to room temperature, you can store them in an airtight container.
