Fried Bell Peppers and Potatoes
Fried Bell Peppers and Potatoes – a typical Italian side dish, very easy to make and so tasty!
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
or 2 medium red bell pepper, cut into 5 cm – 2 inch pieces
or 3 medium, chopped into 3 cm – 1 ¼ inch cubes
extra virgin olive oil
Salt to taste
Put the extra virgin olive oil in a frying pan and fry the potatoes on a low flame until almost cooked. Remove and keep aside.
In the same frying pan, fry the bell peppers on a low flame until almost cooked.
Add the fried potatoes and sliced onions, season with salt to taste, and fry well until cooked through and golden brown.
You can also cover the vegetables with a lid while frying them, this will shorten a bit the cooking time.
