Frozen Piña Colada

Frozen Piña Colada – a tropical delight and a great way to toast to the new year.

  • 90 ml – 3 oz. rum
  • 4 scoops coconut ice cream
  • 120 ml – ½ cup pineapple juice
  • 245 gms – 1 cup frozen pineapple chunks
  • 1/2 tbsp simple syrup
  • Maraschino cherries or regular cherries to garnish
  • Pineapple wedges to garnish


  1. In a blender, combine the coconut ice cream, rum, pineapple juice, frozen pineapple chunks, and simple syrup. Blend until smooth.
  2. Pour into serving glasses. Garnish with maraschino cherry and pineapple wedge.
  3. Drink immediately.

Recipe Notes

To make a non-alcoholic version, substitute the rum with the same amount of coconut water.
