Vegan Mango Bundt Cake

Vegan Mango Bundt Cake – a very moist vegan cake made with pureed mango and dusted with icing sugar.

  • 190 gms – 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cardamom powder
  • 1 ½ cups ripe mango puree
  • 1/3 cup vegetable oil
  • 135 gms – 2/3 cup granulated sugar
  • 1 tsp vanilla


  1. In a bowl, mix the flour, baking powder, salt and cardamom powder together.
  2. In another bowl, whisk the mango puree, vegetable oil, sugar, and vanilla until well combined. Add this to the flour mixture and fold until just incorporated. Don’t overmix.

  3. Transfer the batter to a greased bundt pan and bake in a pre-heated oven at 180C – 350F until the cake is cooked through and a skewer inserted in the middle comes out clean. This will take about 40 minutes.
  4. Transfer to a cooling rack, dust with some icing sugar and serve warm or at room temperature.
