Low Fodmap Chicken and Potato Salad – an easy recipe that use leftovers for a delicious and refreshing lunch that is also gentle on your tummy.

– 2.5 oz. low fodmap cooked chicken
I simply poached mine in salty water, shredded

– 3.5 oz. potatoes
cubed and boiled

medium cucumber
chopped or sliced

walnut halves

tsp
lemon juice

tsp
chives
chopped

Salt to taste

– 1 ½ tbsp low fodmap Mayo
I use Hellman’s

In a serving bowl, mix together the chicken, potatoes, cucumber, walnuts, lemon juice, salt, and chives.

Add the mayo and mix well.

Serve immediately.
