Ingredients

  • 75 gms – 2.5 oz. low fodmap cooked chicken I simply poached mine in salty water, shredded
  • 100 gms – 3.5 oz. potatoes cubed and boiled
  • 1/8 medium cucumber chopped or sliced
  • 5 walnut halves chopped
  • 1 tsp lemon juice
  • 1 tsp chives chopped
  • Salt to taste
  • 30 gms – 1 ½ tbsp low fodmap Mayo I use Hellman’s

Instructions

  1. In a serving bowl, mix together the chicken, potatoes, cucumber, walnuts, lemon juice, salt, and chives.
  2. Add the mayo and mix well.
  3. Serve immediately.
