Ingredients

  • 100 gms – 3.5 oz. dark chocolate
  • 100 gms – ½ cup dairy free spread or butter
  • 200 gms – 1 cup granulated sugar
  • 2 eggs
  • 63 gms – ½ cup all purpose low FODMAP gluten free flour
  • Pinch of salt
  • 1 tsp vanilla extract
  • 100 gms – 3.5 oz. macadamia nuts

Instructions

  1. Melt the spread and chocolate in the microwave until smooth.
  2. Stir in the sugar.
  3. Beat in the eggs one at a time.
  4. Gently mix in the flour, salt, and vanilla extract.
  5. Fold through the macadamia nuts.
  6. Transfer to a 20 cm greased oven tray and bake at 175°C for 20-25 minutes until just barely set in the middle.
  7. Cut into 12 slices and enjoy.
