Low Fodmap Orange Cakes

Low Fodmap Orange Cakes – delicious tea-time treats that are moist and zesty. They are also low fodmap and gluten-free.

Ingredients

  • 2 large Navel oranges about 600 gms – 1 1/3 lbs.
  • 6 large eggs
  • 250 gms – 9 oz. macadamia nuts
  • 250 gms – 1 ¼ cup granulated sugar
  • 1 tsp baking powder
  • 1 tbsp gluten-free low fodmap flour

Instructions

  1. Wash the two oranges, then place them in a small saucepan and cover with water. Bring to the boil and simmer for 2 hours. Remove from the water and set aside to cool slightly.
  2. When cooled, cut them half and remove the pips.
  3. In a food processor, grind the macadamia nuts.
  4. Add the oranges and blitz for 10 seconds.
  5. Add the eggs and blitz some more.
  6. Transfer to a bowl and fold in the gluten-free low fodmap flour, baking powder, and sugar.
  7. Put the batter into muffin tray cups lined with paper.
  8. Bake in a pre-heated oven at 180°C – 355°F for 20–25 minutes.
  9. Serve at room temperature.

Recipe Notes

If you are not following the Low Fodmap diet, you can also use the same amount of almond meal instead of the ground macadamia nuts.

If you are not following either the Low Fodmap or the gluten-free diets, you can use regular flour.

These cakes freeze very well. Just wrap them individually in aluminum foil and then put them in a Ziploc bag. When you want to eat them, simply defrost them by keeping them at room temperature.
