Ingredients

  • 1 ½ kg – 3 1/3 lbs chicken carcasses
  • 1 carrot peeled
  • 3 spring onions green part only
  • 2 tbsp parsley
  • 1 bay leaf
  • 2 cloves
  • 4 peppercorns
  • 1 tsp salt
  • 2 lt water

Instructions

  1. Put the chicken carcasses in a big pot.  Add the peeled carrot, spring onion tops, parsley, bay leaf, cloves, peppercorns, and salt. Cover with water.

  2. Put the pot on the fire and bring to a boil.  Reduce the heat and simmer, uncovered and without stirring for 2 hours.
  3. Strain the stock through a sieve lined with a muslin cloth or a coffee filter and discard the bones, vegetables etc.  Keep aside to cool down, then refrigerate.
  4. When cold, you can remove the solidified fat from the top using a slotted spoon.
  5. Use immediately or freeze.
