Instructions
Marinade & Chicken
Cut the chicken thigh fillets into 3 cm (1.25 inch) pieces. Keep aside.
In a big bowl, mix together all the ingredients for the marinade.
Add the chicken pieces and mix well.
Refrigerate overnight (or at least 4 hours).
Make the skewers and place them on an oven tray lined with baking paper.
Grill on a hot griddle for 10 minutes (or until cooked through) turning them around so they cook evenly.
Remove from the fire and keep them, covered, for 5 minutes to rest.
Herb Sauce
In the meantime, blend all the Herb Sauce ingredients until smooth.
Serve with the warm grilled chicken skewers.
Recipe Notes
If you are not on a low FODMAP diet, you can use regular extra virgin olive oil for the marinade and add 4 garlic cloves, crushed.
For the Herb Sauce, you can use mint instead of fresh oregano if you cannot find any. I would not recommend dried oregano for this recipe as it is too strong in taste.
