Low Fodmap Homemade Mustard Mayo – because everyone deserves a tasty condiment with their sandwiches and burgers!

– ½ cup + 1 tbsp extra virgin olive oil

– ½ cup + 1 tbsp vegetable oil
I use sunflower oil

at room temperature, divided

lemon juice

Dijon mustard

Salt to taste

Mix the oils and keep aside.

Put the egg yolks, salt, and 2 tablespoons of oil in a bowl or in the container of a handstick mixer, and start blending everything together.

Add the egg whites and keep blending.

Now start adding the remaining oil slowly, in a thin, slow and steady stream. Keep blending while adding the oil.

When you have incorporated all the oil and the mayo has thickened, you can slowly add the lemon juice and mustard while still blending.

When all the lemon juice has been incorporated your mayo is ready.
