Low Fodmap Vegetable Stock

Low Fodmap Vegetable Stock – making your own vegetable stock is easy and the result is excellent. So much better than anything you can buy ready-made!

Ingredients

  • 1 medium tomato halved
  • 4 green onion stalks green part only
  • 1 carrot peeled
  • 1 sprig of parsley
  • 2 cloves
  • 2 bay leaves
  • 5 peppercorns
  • 1 tsp salt
  • 2 lt. – 8 ½ cups water

Instructions

  1. In a pot, put all the vegetables. Add the water, herbs, and spices.
  2. Cover and cook for 45 minutes on low.
  3. Remove the vegetables and filter the stock. Enjoy.
