Ingredients

  • 250 g – 2 cups plain flour
  • tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • cup mashed ripe banana – 3–4 small bananas
  • 200 g – 1 cup sugar
  • 110 ml – ½ cup vegetable oil
  • 2 tbsp milk
  • 1 egg
  • 60 g – ½ cup chopped walnuts
  • 40 g – ⅓ cup chopped pecans

Instructions

  1. Grease the loaf pan, dust it lightly with flour, and set it aside.
  2. In a bowl, combine the flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together the egg, sugar, and vegetable oil until smooth.
  4. Add the dry ingredients to the egg mixture and stir until fully blended.
  5. Mix in the milk, vanilla, and mashed bananas until the batter is evenly combined.
  6. Fold in ⅔ of the chopped walnuts and pecans, then pour the batter into the prepared loaf pan.
  7. Sprinkle the remaining nuts on top.
  8. Bake in a preheated oven at 170°C – 325°F for 60 to 80 minutes, or until a toothpick inserted in the centre comes out clean.
