Dolci Pellegrino

Dolci Pellegrino - traditional lemon flavoured cookies from the city of Naples. Originally created by the nuns of a convent, these cookies are easy to make and are perfect for breakfast and teatime!

Ingredients

  • 100 gms – ¾ cup all purpose flour
  • 1 egg yolk
  • 50 gms – ¼ cup granulated sugar
  • 50 gms – 2 ¼ tbsp butter
  • 1 tbsp milk
  • Zest of 1 lemon grated
  • 1 pinch ammonia bicarbonate powder
  • 1/8 tsp vanilla essence
  • Icing Sugar

Instructions

  1. Melt the butter and mix it with the milk.
  2. Put all the ingredients (including the milk and butter mixture) in the bowl of an electric mixer fitted with the paddle attachment.
  3. Knead into a dough.
  4. Roll the dough into a 3mm – 1/8inch thick square. Cut it in 15 squares.
  5. Put the cookies on a baking tray lined with baking paper and bake in a pre-heated oven at 180°C – 355°F for 10 minutes or until golden brown.
  6. Let them cool down and transfer to a wire rack.
  7. When cold, dust with icing sugar and serve.
