Dolci Pellegrino - traditional lemon flavoured cookies from the city of Naples. Originally created by the nuns of a convent, these cookies are easy to make and are perfect for breakfast and teatime!

Ingredients
100gms– ¾ cup all purpose flour
1egg yolk
50gms– ¼ cup granulated sugar
50gms– 2 ¼ tbsp butter
1tbspmilk
Zest of 1 lemongrated
1pinchammonia bicarbonate powder
1/8tspvanilla essence
Icing Sugar
Instructions
Melt the butter and mix it with the milk.
Put all the ingredients (including the milk and butter mixture) in the bowl of an electric mixer fitted with the paddle attachment.
Knead into a dough.
Roll the dough into a 3mm – 1/8inch thick square. Cut it in 15 squares.
Put the cookies on a baking tray lined with baking paper and bake in a pre-heated oven at 180°C – 355°F for 10 minutes or until golden brown.
