Pour a glass of Homemade Limoncello, a traditional Italian lemon liqueur with vibrant citrus flavour and a refreshing finish.
Peel the lemons, removing as much of the white pith as possible. Leaving the white pith will make your Limoncello bitter.
Place the lemon peels in a large glass jar with 700 ml – 3 cups of alcohol. Seal the jar tightly and store it in a cool, dark place for at least 10 days and up to 30 days.
Add the cooled sugar syrup to the lemon peel and alcohol mixture. Then add the remaining alcohol.
Note: Before adding the remaining alcohol, check that the mixture has turned yellow. If it has not, continue infusing until the desired colour develops.
Stir well and seal the jar tightly again. Store it in a cool, dark place for at least 7 days and up to 30 days. Then strain the Limoncello into bottles.
Store it in the refrigerator or freezer. Serve well chilled after meals.
