Ingredients

  • 130 g – ⅔ cup granulated sugar
  • 60 ml – ¼ cup water
  • 240 ml – 1 cup heavy cream
  • 2 tbsp white miso

Instructions

  1. Dilute the miso paste with 2 tablespoons of water, then pass it through a sieve to remove any lumps. Set aside.

  2. Put the granulated sugar and water in a pot and bring to a boil without stirring.
  3. When the caramel turns a deep amber colour, remove the pot from the heat and carefully add the cream. Whisk until smooth. Be careful, as the mixture will bubble up rapidly.
  4. Return the pot to the heat and add the miso mixture. Whisk continuously and cook until the sauce thickens slightly.
  5. Transfer the sauce to a glass jar, let it cool completely, then store it in the fridge.
