Ingredients

Chili

  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic cloves chopped
  • 500 gms – 1.1 lbs. beef ground
  • 400 gms – 14 oz. red kidney beans canned and rinsed
  • 1 tsp paprika
  • 2 tsp cumin powder
  • 1.5 tsp coriander powder
  • 1 tsp oregano
  • 2 tbsp tomato purée
  • 400 gms – 14 oz. diced tomatoes canned
  • Salt to taste
  • Water
  • Coriander

To Garnish

  • Tomato chopped
  • Avocado
  • Sour Cream
  • Coriander leaves

Instructions

  1. Sauté the chopped onion and garlic with the olive oil over medium heat in a large heavy-based pot. Cook until softened.
  2. Add the ground beef and brown the meat breaking all the lumps.
  3. Add the paprika, cumin powder, coriander powder, oregano and stir.
  4. Add the tomato purée, diced tomatoes, kidney beans, a few coriander leaves and 500 ml – 2 cups of water. Stir until combined.
  5. Bring to a boil then reduce the heat to low and cook, stirring occasionally, for 1 hour.
  6. Season with salt and pepper.
  7. Serve topped with chopped avocado, tomato, sour cream and extra coriander leaves.
