Braised Onion Pasta Recipe

Ingredients

  • 3 large onions – sliced
  • 120 to 160 ml – ½ to ⅔ cup extra virgin olive oil
  • 30 ml – 2 tbsp water
  • salt and pepper – to taste
  • 350 g – ¾ lb linguine or spaghetti

To Serve

  • Pecorino Romano – finely grated
  • thyme – optional

Instructions

  1. Put the sliced onions, extra virgin olive oil, and water into a pan. Cover and braise over a low heat until the onions are soft.

  2. Season with salt and pepper.
  3. Cook the pasta according to the package instructions until al dente. Drain, then toss it with the onion sauce until evenly coated.

  4. Serve immediately with a generous amount of finely grated Pecorino Romano, freshly ground black pepper, and fresh thyme, if desired.
