Ingredients

Pomegranate Dressing

  • 3 tbsp pomegranate juice
  • 1 tbsp balsamic vinegar
  • ¾ tbsp honey
  • 3 tbsp extra virgin olive oil
  • ½ tsp salt
  • 1 pinch black pepper
  • ½ tbsp za'atar

Tomato and Pomegranate Salad

  • 500 g mixed small tomatoes – halved, I used Sweet Solano and Kumato tomatoes
  • 100 g homemade labneh
  • cup fresh mint – shredded
  • 2 spring onions – sliced
  • 4 tbsp pomegranate arils

Instructions

Pomegranate Dressing

  1. Add all the dressing ingredients to a jar. Seal the jar tightly and shake well until fully combined. Set aside.

Tomato and Pomegranate Salad

  1. In a large bowl, combine the tomatoes, mint, spring onions, and pomegranate arils.
  2. Toss with half of the dressing.
  3. Add the labneh balls, then drizzle the remaining dressing over the salad.
  4. Serve immediately.
