Pan-Fried Sicilian Pork Sausage with Fennel Recipe

Ingredients

  • 500 g – 1.1 lbs Sicilian fennel pork sausage
  • 80 ml – ⅓ cup white wine
  • Water – as needed

Instructions

  1. Roll the sausage and place it in a frying pan.

  2. Add enough water to cover about ¾ of the sausage and set the pan over medium heat. Cook, turning the sausage occasionally, until the water has completely evaporated and the sausage is cooked through. As it cooks, prick the fatty pockets with a skewer to release some of the fat. Be careful, as the fat may splatter.
  3. When the water has evaporated, increase the heat and add the white wine. Fry the sausage on both sides until the wine has reduced completely and the sausage is nicely browned.
  4. Serve warm with baked potatoes.
